Vol. 1 “I see it, I like it, I want it, I check the ingredients, I put it back on the shelf”

So I’m here, this is what it feels like to be in the elite circle of being that is veganism that means I can pretend I’m better than everyone else: pure hunger.
Honestly it hasn’t been too bad, I am DYING for a cheese toastie, more than I ever have in my entire life, also I dreamt about prawns last night. But it means I can go into those really cool shops that have ingredients that no-one actually knows what they’re for and talk to people who have dreadlocks and necklaces with moons on. But that may start to wear off when I get sick of paying £2.60 for a litre of oat milk.
My recipe for this week is pretty simple but a game changer, overnight oats!

What you need:
  • Oats (obviously but not instant oats, you need a bag of those industrial looking bad boys – usually with a man with a kilt on the front or some sort of Scottish paraphernalia)
  • Oat milk
  • Chia seeds
  • Vanilla extract
  • Salt
  • Berries
  • Some sort of jar that makes you look like you’re too good to talk to anyone around you (I use a Kilner jar – you heard.)

So the first thing is ratio and I am rubbish, I am literally the worst at guessing how much to put in so the first time I tried this was pretty tragic and sloppy. I have worked out that 1:2 ratio of oats and oat milk is perfect but I usually sprinkle a few more oats in for luck. It also depends what texture you like your porridge, but I like to stick to the 1:2 ratio.
Get your posh jar or tupperware box if you’re trash and tip half a cup of oats in. Then get two teaspoons of chia seeds and pour your cup of oat milk in.
I use half a teaspoon of vanilla extract (this isn’t essential but delicious) and a pinch of salt and give it a really, really good stir.
Pop it in the fridge overnight and wait for science (chemistry?) to do its thang. When you wake up,  stir it like a maniac and add the berries or bananas if you’re sick.
That’s literally it! The chia seeds make it so creamy and the oat milk (unsurprisingly) just blends in with the taste of the oats so no strong soya taste or anything.
